Kidney Friendly Recipe – Chana Dal Soup

Ingredients
- 1 Cup Moong Dal (Split Yellow Lentils)
- 1 Cup Rice
- 4 Cups Water
- 1 Tablespoon Oil Or Ghee
- 1 Onion, Sliced
- 2 Cloves Garlic, Minced
- 1/2 Teaspoon Cumin Seeds (Jeera)
- 1/2 Teaspoon Coriander Powder
- 1/4 Teaspoon Turmeric Powder
- Salt To Taste
- Fresh Coriander, Chopped For Garnish
Instructions
- Rinse The Moong Dal And Rice Together In A Fine-Mesh Strainer And Add Them To A Pot With 4 Cups Of Water. Bring To A Boil. Then Reduce Heat And Simmer For 20-25 Minutes. Until The Dal And Rice Are Tender.
- Heat The Oil Or Ghee In A Separate Pan Over Medium Heat.
- Add The Onion And Sauté For 2-3 Minutes, Until Softened.
- Add The Garlic, Cumin Seeds, Coriander Powder, And Turmeric Powder To The Pan And Sauté For Another 1-2 Minutes. Until Fragrant.
- Add The Onion And Spice Mixture To The Pot With The Dal And Rice And Stir To Combine.
- Season With Salt To Taste.
- Garnish With Fresh Coriander Before Serving.
