Kidney Friendly Recipe – Mixed Veg Curry

Ingredients
- 1 Onion, Chopped
- 2 Cloves Of Garlic, Minced
- 1 Tablespoon Of Ginger, Minced
- 2 Cups Of Mixed Vegetables (Carrots, Green Beans, Bell Peppers, Zucchini, Etc.)
- 1 Teaspoon Of Cumin Seeds
- 1 Teaspoon Of Coriander Powder
- 1/2 Teaspoon Of Turmeric Powder
- 1/2 Teaspoon Of Garam Masala
- 2 Cups Of Low-Sodium Vegetable Broth
- Salt And Black Pepper To Taste
- 1 Tablespoon Of Olive Oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and ginger, and cook for 3-4 minutes until the onion is soft.
- Add the mixed vegetables and cook for 5-7 minutes until they are slightly tender.
- Add the cumin seeds, coriander powder, turmeric powder, and garam masala.
- stir for 1-2 minutes. add the vegetable broth and bring to a boil.
- Reduce heat to a simmer and cook for 20-25 minutes or until the vegetables are fully cooked.
- Season with salt and black pepper to taste. serve hot with a side of brown rice or quinoa.
